If I needed proof that my husband really likes my newly more muscular body, you would need to look no further than this photo. Here he is creating awesome high protein vegan muffins for me so that I can get lots of vegan protein for my muscles! I’m telling you ladies, if you want your man to cook for you, just get your butt looking really good from weight training and tell him all about how you need lots of vegan protein to grow your muscles to look like that. Works like a charm!
And since he’s such a great guy, he’s agreed to share his recipe here so that you can get your man to bake some for you (or if you are a man, you can bake some for your lady—yes, the way to a woman’s heart is often through the stomach too!):
Yummy Strawberry Muffins (makes 6, each has 20 grams of protein and 340 calories):
3 cups spelt flour
3 1/2 scoops Spirutein
1/4 cup apple sauce
1/8 cup Earth Balance vegan butter
3 Tbsp Organic Agave Syrup (he chose this sweetener because it’s low on the glycemic index, so it doesn’t cause a spike in insulin and cortisol, which is dangerous for body builders)
1 cup walnuts
5 1/2 tsp baking powder
Preheat oven to 360 degrees and grease a muffin pan with a little Earth Balance. Put bananas, Earth Balance, applesauce, agave and Spirutein in a bowl and mix. In a separate bowl, mix flour, baking powder and nuts. Mix the 2 bowls together until blended, then immediately fill greased muffin pan, filling each muffin hole about half way. Bake for 25 minutes.
